Ebi katsu (prawn katsu) is one of the popular menu for hamburger shops in Japan. Be katsu sandwich would be a great lunch to bring to work! Succulent prawns in a panko crumb with mild curry sauce, pickles and steamed rice.

For the sauce: Heat oil in a large frying pan and fry onion garlic and carrots for 10 minutes.
Add spices and flour to the pan and stir for 1 minute, then add the stock, honey and soy sauce and simmer for 20 minutes
For the Prawns: Place 100ml oil into a separate large frying pan and heat.
Coat each prawn in flour, then dip them into the egg, then coat in breadcrumbs, making sure you cover all of the prawns.
After all the prawns have been coated, place into the hot oil (making sure you test the heat of the oil first, by dropping some breadcrumbs into the oil and seeing if it sizzles). Fry all prawns until golden
After they have been cooked, place on kitchen paper to absorb all the excess oil.
After the sauce has thickened, put into a blender and blend until smooth.
Serve with sticky rice and Asian vegetables.
Recipe Note
Please take extra care when frying the prawns in oil.
