This is the secret ingredient to Japanese cooking. Have you ever been in a situation (like us by the way) and wondered what 'mirin' is in most Japanese recipes and why its so commonly used? Well its that hard to place flavour with sweetness is what 'mirin' brings to the table. A bit part of Japanese cooking is getting the sauces flavourfull and that is exactly what it does!  The sugar in Mirin is the key secret which works wonderfully in marinades, glazes and sauces. It tenderizes meats, thickens sauces and adds a gorgeous glaze. Traditional Mirin is similar to sake, but has more sugar and a lower alcohol content (14% to be precise) - however in the Middle East - the non alcoholic version is called Honteri Mirin - which is exactly the seasoning, providing the same deep sweetness of flavour. If it contained alcohol we would be allowed to sell it on this site - so rest assured.
