Red miso is made from soy beans, barley and other grains with a long fermentation process to create a mature taste, rich in umami flavours (the common deliciousness found in savoury foods like fermented soy products, cheese, and shiitake mushrooms. English-language approximations usually refer to a savoury, meaty or “full” taste). The intense, salty flavour of red miso is a popular choice for giving many dishes a richer flavour. How To Use Miso is most famous for miso soup, but has many other uses. • Add a spoonful of miso paste to hot dashi stock water to create miso soup.• Marinade fish in miso before grilling for an authentic Japanese meal.• Mix with soy and dashi stock to create a rich and filling soup base for noodle dishes.
