Hakata Salt has a mildly salty taste (yes we know how this sounds), with a slight hint of sweetness.   However if you read up about Salt manufacturing process - its a highly fuel intensive process. Hence Hakata Salt emerged from a consumer movement that aimed to provide safe and tasty salt. This new production process gives it its pleasant bitterness.
