Coconut Bean Vegan Curry
Ingredients:
- 300g green lentils
- 300g kidney beans
- 2 tbsp cumin seeds
- 3 tbsp coconut oil
- 6 cloves garlic
- 600g onion
- 300g mushroom
- 150g lotus root
- 4 cans of coconut milk
- 800ml water
- 2 tbsp coriander powder
- 2 tbsp turmeric powder
- 2 tbsp salt
- 1/2 tsp cayenne pepper
Instructions
- Soak green lentils and kidney beans for 6 hours, then cook with pressure cooker for 5 mins.
- Lightly toast cumin seeds.
- Add coconut oil, garlic, onion, mushroom and lotus root. keep cooking until the vegetables are cooked.
- Pour coconut milk and water.
- Add coriander, turmeric, salt and cayenne pepper.
