Coconut Bean Vegan Curry

 
Ingredients:
  • 300g green lentils
  • 300g kidney beans
  • 2 tbsp cumin seeds
  • 3 tbsp coconut oil
  • 6 cloves garlic
  • 600g onion
  • 300g mushroom
  • 150g lotus root
  • 4 cans of coconut milk
  • 800ml water
  • 2 tbsp coriander powder
  • 2 tbsp turmeric powder
  • 2 tbsp salt
  • 1/2 tsp cayenne pepper
Instructions
  • Soak green lentils and kidney beans for 6 hours, then cook with pressure cooker for 5 mins.
  • Lightly toast cumin seeds.
  • Add coconut oil, garlic, onion, mushroom and lotus root. keep cooking until the vegetables are cooked.
  • Pour coconut milk and water.
  • Add coriander, turmeric, salt and cayenne pepper.
